Korean Style Meatballs

Natasha and Matt's take on Korean-Style Meatballs, inspired by a NYT Recipe.
Ingredients
- 1 lb ground beef
- Scallions, chopped finely
- 3-5 cloves of garlic, minced
- 1-3 inches fresh ginger, peeled and minced
- 1+ Tbsp Gochujang
- Soy Sauce
- Sesame Oil
- Salt, to taste
- Pepper, to taste
- Rice, for serving
- Sesame Seeds, for serving
- Scallions, for serving
- Honey, for sauce
- Soy Sauce, for sauce
- Mirin, for sauce
- Gochujang, for sauce
Instructions
- Preheat oven to 375
- Mix together the beef, scallions, garlic, ginger, gochujang, soy sauce, and sesame oil in a bowl
- Form small balls and place on a baking sheet (we made 18)
- Bake for 12-15 minutes until cooked through
- Meanwhile, make the rice for serving
- Meanwhile, put sauce ingrediants in a small saucepan, and heat until thickened and reduced
- Split rice among bowls, top with meatballs, then sauce, scallions, and sesame seeds
