Korean Style Meatballs

Natasha and Matt's take on Korean-Style Meatballs, inspired by a NYT Recipe.

Ingredients

  • 1 lb ground beef
  • Scallions, chopped finely
  • 3-5 cloves of garlic, minced
  • 1-3 inches fresh ginger, peeled and minced
  • 1+ Tbsp Gochujang
  • Soy Sauce
  • Sesame Oil
  • Salt, to taste
  • Pepper, to taste
  • Rice, for serving
  • Sesame Seeds, for serving
  • Scallions, for serving
  • Honey, for sauce
  • Soy Sauce, for sauce
  • Mirin, for sauce
  • Gochujang, for sauce

Instructions

  1. Preheat oven to 375
  2. Mix together the beef, scallions, garlic, ginger, gochujang, soy sauce, and sesame oil in a bowl
  3. Form small balls and place on a baking sheet (we made 18)
  4. Bake for 12-15 minutes until cooked through
  5. Meanwhile, make the rice for serving
  6. Meanwhile, put sauce ingrediants in a small saucepan, and heat until thickened and reduced
  7. Split rice among bowls, top with meatballs, then sauce, scallions, and sesame seeds
