Ingredients

  • 270g whole wheat flour
  • 1 teaspoon vegetable oil
  • 170ml water

Instructions

  1. Add whole wheat flour to a large bowl.
  2. Add vegetable oil to whole wheat flour and mix.
  3. Add warm water a little at a time, and mix well. We used 78, 33, 41, and 18 ml increments.
  4. Knead dough until smooth using your knuckles. Do not overknead or it will be tough.
  5. Cover dough with damp paper towel for at least an hour.
  6. Separate dough into 12 equal pieces and roll them into flat circles.
  7. Heat cast iron skillet until it is HOT. Have open flame ready.
  8. Put dough on cast iron for 10-15 seconds until it is starting to bubble.
  9. Flip on cast iron and leave for 10-15 seconds.
  10. Flip onto the open flame (original side down first)
  11. After it puffs and chars, flip to the other side.
  12. Take off the flame and serve immediately
