Ingredients

  • (Meatballs) 2 lbs lean ground turkey
  • (Meatballs) 1 cup whole wheat panko breadcrumbs
  • (Meatballs) 2 eggs
  • (Meatballs) 1/4 cup green onions, chopped
  • (Meatballs) 1/2 teaspoon garlic powder
  • (Meatballs) 1/2 teaspoon salt
  • (Meatballs) 1/2 teaspoon black pepper
  • (Sauce) 1/4 cup Sriracha
  • (Sauce) 3 tablespoons reduced-sodium soy sauce
  • (Sauce) 3 tablespoons rice vinegar
  • (Sauce) 3 tablespoons honey
  • (Sauce) 1 Tbsp grated fresh ginger
  • (Sauce) 3 cloves garlic, minced
  • (Sauce) 1/2 teaspoon sesame oil

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, mix together turkey, breadcrumbs, eggs, green onions, garlic powder and salt/pepper until well combined.
  3. Shape mixture into 1 1/2-inch balls (roughly 40) and place spaced apart on lightly sprayed baking sheets lined with foil.
  4. Bake meatballs for 20 to 25 minutes, or until browned and cooked through.
  5. While the meatballs are baking, combine all the ingredients for the sauce in a small saucepan and bring to a boil over medium heat, whisking continuously.
  6. Reduce heat and simmer for 8 to 10 minutes (the sauce will start to thicken) then toss with the meatballs.
  7. Divide evenly among bowls or containers with any side.
