Tteokbokki

Ingredients
- 2 tbsp gojuchang
- 2 cloves garlic, chopped
- 1 tbsp mirin
- 1/4 cup soy sauce
- 1/3 cup water
- 1/2 package tteokbokki-tteok
- 1 white onion
- 1 carrot
- sesame seeds, for garnish
- scallions, for garnish
Instructions
- soak the tteobokki-tteok in warm water for 10-15 minutes
- while they are soaking, make the sauce with the gojuchang, garlic, mirin, soy sauce, and water
- add 1-2 tablespoons of oil to the pan and heat
- add chopped carrots and onions and cook on low (I leave them in bigger chunks to get some crunch)
- after 5 minutes add the sauce and stir, keep heat on low
- add the tteokbokki and cook for 10 minutes, until soft
- remove from heat, put in bowls, and add some sesame seeds as garnish
