Ingredients

  • Pickling container. Make sure it's glass or pyrex that won't absorb scent or flavor.
  • 1-2 red onions. Use what fits in your desired pickling container.
  • 2/3 cup white vinegar
  • 1/8 cup red wine vinegar
  • 3/4 cup water
  • 1 teaspoon sugar
  • 1-2 teaspoons salt
  • Optional : sliced garlic, fresh dill, or other herbs

Instructions

  1. Thinly slice the red onions, separating the pieces as you put in your desired pickling container.
  2. Mix the rest of the ingredients in a small saucepan.
  3. Boil the vinegar/water mixture until the sugar and salt have fully dissolved.
  4. Pour the mixture over the red onions, pushing any onions under the mixture if necessary.
  5. Let sit out at room temperature for around an hour before covering and putting in the fridge. Keeps up to a week+ in the fridge.
