Pickled Red Onion

Matt's adaptation to a few online recipes.
Ingredients
- Pickling container. Make sure it's glass or pyrex that won't absorb scent or flavor.
- 1-2 red onions. Use what fits in your desired pickling container.
- 2/3 cup white vinegar
- 1/8 cup red wine vinegar
- 3/4 cup water
- 1 teaspoon sugar
- 1-2 teaspoons salt
- Optional : sliced garlic, fresh dill, or other herbs
Instructions
- Thinly slice the red onions, separating the pieces as you put in your desired pickling container.
- Mix the rest of the ingredients in a small saucepan.
- Boil the vinegar/water mixture until the sugar and salt have fully dissolved.
- Pour the mixture over the red onions, pushing any onions under the mixture if necessary.
- Let sit out at room temperature for around an hour before covering and putting in the fridge. Keeps up to a week+ in the fridge.
