Chili-Lime Roasted Almonds

Ingredients

  • 3 cups raw almonds
  • 2 tablespoons coconut oil melted
  • 2 teaspoons chili powder
  • 4 tablespoons fresh lime juice about 2 limes
  • zest from one lime
  • 1/4 teaspoon sea salt
  • 1 garlic clove minced
  • 1 tablespoon 100% pure maple syrup

Instructions

  1. Preheat oven to 250 degrees F. Then, cover a large baking sheet with parchment paper.
  2. In one bowl, mix the lime juice, coconut oil, maple syrup and lime zest
  3. In a second bowl, mix the chili powder, salt, and garlic.
  4. Mix the nuts into the wet ingredients, then toss to coat with the dry.
  5. Pour onto the covered baking sheet and bake for 1 hour, stirring every 20-30 minutes until golden brown
