Cinnamon Roasted Almonds

Ingredients
- 3 cups raw almonds
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1/8 cup white sugar
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1 egg white
Instructions
- Preheat oven to 250 degrees F. Then, cover a large baking sheet with parchment paper.
- In one bowl, lightly beat the egg white; add water, and beat until frothy but not stiff.
- In a second bowl, mix the sugar, salt, and cinnamon.
- Mix the nuts into the wet ingredients, then toss to coat with the dry.
- Pour onto the covered baking sheet and bake for 1 hour, stirring every 20-30 minutes until golden brown
