Ingredients

  • 1/4 cup extra-virgin olive oil
  • 2 garlic cloves diced
  • 1 yellow or white onion, finely diced
  • 1 red bell pepper finely diced
  • 1 poblano or jalapeno pepper, finely diced
  • 1 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes, optional
  • 1 pound vine or roma tomatoes finely diced
  • 1 pound russet potatoes about 2 medium, peeled and cut into 1-inch cubes
  • 2 cups chicken stock or water
  • 1 1/2 pounds cod or other semi-firm white fish cut into 2-inch pieces
  • 2 tablespoons finely chopped fresh flat-leaf parsley leaves

Instructions

  1. Heat the oil in a large lidded heavy bottomed saucepan or Dutch oven.
  2. Carefully add the pnion, garlic, peppers, salt, and pepper flakes, if using. Sauté over medium heat until the vegetables are very soft but not browning, about 10 minutes.
  3. Stir in the tomatoes and potatoes. Cover with the stock or water and bring to a boil. Turn the heat down to medium-low and simmer, stirring occasionally, until the potatoes are tender and the broth has thickened, about 15 minutes.
  4. Season the fish with salt and pepper, nestle it into the tomato mixture, and cover with a lid. Simmer until the fish is tender but not falling apart, about 7 minutes.
  5. Garnish with the parsley and serve immediately.
