Sourdough Scallion Pancakes

Ingredients

  • 1 cup (248g) Sourdough starter discard
  • 1-4 tablespoons water, depending on batter consistency
  • 1 tablespoon sesame oil (plus more for the skillet)
  • 1 tsp ginger
  • Salt & pepper to taste
  • 1/2 cup thinly sliced scallions
  • 3 tablespoons Sesame seeds
  • 1-2 tsp soy sauce, for dipping

Instructions

  1. Mix starter, sesame oil, salt, pepper, and ginger in a bowl to form a thick batter.
  2. Add half of scallions and sesame seeds to batter.
  3. Add water 1 tablespoon at a time until you have a thin enough batter to make pancakes.
  4. Heat some more sesame oil a skillet over medium-high heat.
  5. Pour batter into the skillet to form pancakes. Top raw pancakes with scallions and more sesame seeds.
  6. When the edges are dark and bubbles have formed around the edges and surface of the pancake (about 2-3 minutes) flip and cook an additional 2-3 minutes. Repeat with the rest of the batter.
  7. Serve with soy sauce for dipping.
